Just finishing the Malhotra one. One thing that shocked me was his use of balsimic vinegar in Panjabi style meat curry recipes - not heard of this before?? Anyone try it? Problem with experimenting like this is, if it don't come out to your taste you end up messing up a whole pateela's worth of ingredients.
