Cooking With Apples

I have an apple tree in my garden and its got tons of small red apples falling off now.

So far I have been putting them in all cooked foods I make - dhals, sabzi's etc. (It makes a great replacement for aloos in the dishes; similar taste, texture, look)

Any more ideas on how I can utilise these apples in cooking ??

Its got to be cooked otherwise its got a very bitter taste when raw.

Trying to cook without using Wheat Flour or any form of sugar - so apple pie is a nono :(
